What is Demi Glace?

Demi glace is a rich brown sauce prepared by combining together espagnole and stock. Usually espagnole sauce is prepared from brown stock, brown roux and tomato paste. In French cuisine traditionally veal stock is used to prepare demi glace. Watch this video to know more from Chef Todd Mohr.
