Oops! Melissa has missed the thanksgiving…. But she comes up with the much needed but seldom given tips on ‘after thanksgiving’. Thanksgiving doesn’t mean that you have to be thankful for all the leftovers and dozens of turkey sandwiches…there is a limit to how much of those you can eat you know!!
Melissa gives you a recipe for an Asian themed turkey with pineapple-cranberry-ginger sauce. Since the turkey is already cooked, all you need to do is prepare the sauce.
• One cup or half a cup of crushed pineapple is placed in a medium sauce followed by the leftover cranberry sauce and one teaspoon of crushed or grated ginger.
• This done, some garlic, onion, pepper and salt is added to the mixture in the pan. The heat is set to low medium and the mixture is stirred till warm.
• A little teriyaki sauce is now added to the turkey. The turkey is tossed properly in the teriyaki sauce so that it gets coated properly. It is then reheated in a microwave or on a skillet.
• A side dish of rice noodles tossed in soy sauce with string beans and a sprinkling of sesame seeds is recommended as Melissa’s choice.
