On top of all, marinades provide the special flavors and tastes to the delicious, lip-smacking dishes. Whenever you prepare any marinade, you should keep in mind that you have to blend 3 most important things; these are acids, oils and aromatics. All these three ingredients work independently to make the meat tender, preserved and spicy, respectively. The oil can be any type of cooking oil, depending on your choice, like olive oil, vegetable oil, mustard oil etc. Similarly, the aromatics can be special herbs or spices or certain vegetables. You can use any particular type aromatics or a combination of many. Finally, the alcohol is used to perform the task of the acids. But there are quite a few options, other than the alcohol, which you can use in your marinade to tenderize the meat.
Vinegar is often used to prepare the marinades for its acidic property. You will get a wide array of vinegars to use in this purpose. Some of them are balsamic vinegar, red wine vinegar, rice vinegar, herbed vinegar, apple cider vinegar etc. Along with the vinegar, you will require to mix few spices to enhance the aroma and the taste of the food. Spices like garlic, onion, ginger etc go well with vinegar. All vinegars do not taste or smell same. So, before mixing the ingredients for preparing the marinade, you should practically know about it.
Yogurt is a common base for marinades in most of the Indian specialties. Usually plain yogurt is used to prepare the marinade. This yogurt actually adds a savory taste to the preparation other than tenderizing the meat. However, you should better use a low fat variation than the normal choice. Any Indian spices like cumin, coriander, garam masala etc blends perfectly with the aroma and taste of yogurt. You can also prepare the marinade with minced garlic, ginger and onion. This will surely add a different taste, texture and flavor to your favorite meat.
Citrus juices are normally used for fish or poultry choices. Among the citrus fruits, lemon and orange are mostly used. This type of marinades can be used with honey to glaze over the salmon or chicken breast before putting them inside oven. The sweet flavor of orange does not match with everything, so you should be careful to choose the spices and herbs for preparing the marinades.
These are usually kept dry without using any oil or acid substances. The dry marinades are mainly developed by using a variety of spices along with salt. This dry mixture is rubbed on the surface of the meat or fish and the food item is allowed to stand for some time inside the refrigerator before cooking.
