Risotto is such a flexible dish. Not only can you change the flavor from within, but you can change the flavor on top as well. In this video you will see I made a basic risotto and topped it with 3 different toppings.

I started loving risotto on a trip to Greece in 2000. We had has some good meals while we were there (best outside of the city). On the last day we were sitting in an Italian restaurant in Santorini and my Dad ordered the risotto. It was the best risotto I had ever had in my life. I'm sure the setting didn't hurt - sitting on the side of a pristine mountain, sun setting, surrounded by friends and family all enjoying the end of a great day. It was so good that I pushed my plate aside and ordered it for myself. When I returned home I made it almost every day until I had it perfected. Now we have it a few times a month...
