Haystack cookie is generally made from nuts, dates and oats. The cookies are made into a ball with a spoon and pressed tightly. The origin of the name of the cookie is not very clear but the pressed cookie sitting on the sheet looks much like a haystack. The oatmeal gives it a yellow color. Banana, peanut butter and honey are also added in some recipes of the haystack cookie further enhancing the yellow color.
