Coconut cookie is made with fresh coconut and its makes a good seasonal bake. The mild taste of coconut is very appetizing and bits of the kernel can be left in to add a definite coconut feel to the cookie. Coconut cookies have flour as their base along with butter, sugar and salt. Baking powder is used to make coconut cookies. Coconut cookies are crisp on the outside but chewy on the inside. Served fresh from the oven they go great with a glass of warm milk.
