Filled Oat Crisps

Ingredients
  Cake flour 2 1⁄2 Cup (40 tbs), sifted
  Baking powder 1⁄2 Teaspoon
  Salt 1⁄2 Teaspoon
  Rolled oats 2 1⁄2 Cup (40 tbs), ground fine
  Butter 1 Cup (16 tbs)
  Light brown sugar 1 Cup (16 tbs)
  Water 1⁄2 Cup (8 tbs)
  Raisin filling 1 Cup (16 tbs)
Directions

GETTING READY
1.Start by preheating the oven to 350F degrees
MAKING
2.In a bowl, sift flour with baking powder and salt and add rolled oats.
3.Cream butter with sugar until fluffy
4.Add dry ingredients alternately with water
5.Chill
6.Roll out a portion of dough about 1/8 inch thick on lightly floured board and cut into 2-inch rounds
7.Bake on greased baking sheet in moderate oven for 10 minutes or until browned
8.Cool and store
9.When ready to use, spread filling on one cookie and top with another
SERVING
10.Serve with cream, milk, or raspberries
