Sesame Seed Brittle
|Sugar||1 1⁄2 Cup (24 tbs)|
|Honey||1⁄2 Cup (8 tbs)|
|Lemon juice||1 Teaspoon|
|Sesame seeds||1 Cup (16 tbs)|
Cook the sugar, honey, water and lemon juice in a saucepan over low heat, stirring constantly, until the sugar is dissolved.
Continue cooking over low heat, without stirring, until the mixture reaches 300 degrees on a candy thermometer (a brittle, hard thread will form when a few drops are tested in cold water), about twenty minutes.
Remove from the heat and stir in the cinnamon and sesame seeds.
Pour the brittle onto a buttered cooky sheet in a thin layer.
Loosen before the candy hardens.
When cold, break the brittle into pieces.
