Date-Walnut Pinwheel Cookies

Date and walnut pinwheel cookies are prepared with chopped dates and walnuts. Flavored with lemon juice and rind and combined with cookie mix, eggs, sugar and water, the date walnut pinwheel cookie dough is rolled as jelly roll and sliced and baked for delightful pinwheel shaped cookies.
Ingredients
  Chopped walnuts 1 Cup (16 tbs)
  Chopped dates 1 Cup (16 tbs)
  Lemon juice 1⁄2 Teaspoon
  Plain cookie mix 13 Ounce (1 Package)
  Egg 1 , beaten
  Water 1 Tablespoon
  Sugar 1⁄2 Cup (8 tbs)
  Water 1⁄2 Cup (8 tbs)
Directions

Mix dates, lemon rind and juice, sugar and 1/2 cup water in a pan.
Cook, stirring until thick, about 10 minutes.
Add walnuts.
Cool.
Blend cookie mix with egg and 1 tablespoon water.
Roll in two 10 x 7 inch rectangles.
Spread with walnut and date mixture.
Roll as for a jelly roll.
Wrap in waxed paper and chill until firm.
Slice 1/4 inch thick.
Bake on greased cookie sheet at 375° for 8 to 9 minutes.
