Date-Walnut Pinwheel Cookies
|Chopped walnuts||1 Cup (16 tbs)|
|Chopped dates||1 Cup (16 tbs)|
|Lemon juice||1⁄2 Teaspoon|
|Plain cookie mix||13 Ounce (1 Package)|
|Egg||1 , beaten|
|Sugar||1⁄2 Cup (8 tbs)|
|Water||1⁄2 Cup (8 tbs)|
Mix dates, lemon rind and juice, sugar and 1/2 cup water in a pan.
Cook, stirring until thick, about 10 minutes.
Blend cookie mix with egg and 1 tablespoon water.
Roll in two 10 x 7 inch rectangles.
Spread with walnut and date mixture.
Roll as for a jelly roll.
Wrap in waxed paper and chill until firm.
Slice 1/4 inch thick.
Bake on greased cookie sheet at 375Â° for 8 to 9 minutes.
