Sugar Top Cookies
|Butter||1⁄2 Cup (8 tbs), softened|
|Sugar||1 Cup (16 tbs)|
|Flour||1 1⁄2 Cup (24 tbs)|
|Baking powder||1 Teaspoon|
|Walnuts||1⁄2 Cup (8 tbs), finely chopped (or pecans)|
|Vanilla extract||1 Teaspoon|
|Packed brown sugar||1 Cup (16 tbs)|
Cream the butter and sugar in a mixing bowl until light and fluffy.
Add the vanilla and eggs; beat until creamy.
Sift the flour, baking powder and salt into the butter mixture and stir to blend.
Spread in a well greased 9x13 inch baking dish.
Sprinkle with chopped nuts.
Bake at 350 degrees for 20 minutes.
Beat the egg whites until stiff peaks form.
Beat in the vanilla and fold in the brown sugar.
Spread over the cookie dough layer, sealing to the edge.
Bake for a few minutes or until light brown.
Cool and cut into squares.
