Ingredients
  Shortening 1⁄2 Cup (8 tbs)
  Brown sugar 1 1⁄4 Cup (20 tbs)
  Eggs 2
  Cooked pumpkin 1 1⁄2 Cup (24 tbs), mashed
  Salt 1⁄2 Teaspoon
  Ginger 1⁄4 Teaspoon
  Nutmeg 1⁄2 Teaspoon
  Cinnamon 1⁄2 Teaspoon
  Cake flour 2 1⁄2 Cup (40 tbs)
  Baking powder 4 Teaspoon
  Raisins 1 Cup (16 tbs)
  Nuts 1 Cup (16 tbs), chopped
  Lemon extract 1 Teaspoon
Directions

Cream shortening and sifted sugar thoroughly.
Add eggs, pumpkin and seasonings.
Blend well.
Sift flour and baking powder together, stir in raisins and nuts.
Add flour mixture to the creamed mixture and beat.
Blend in lemon extract.
Drop from teaspoon onto greased cookie sheet.
Bake 15 minutes at 400°F.
