Refrigerator Oatmeal Cookies
|Cake flour||1 Cup (16 tbs)|
|Rolled oats||2 Cup (32 tbs), finley ground|
|Coconut||1 Cup (16 tbs), chopped|
|Shortening||1⁄2 Cup (8 tbs)|
|Sugar||1 Cup (16 tbs)|
|Evaporated milk||1⁄4 Cup (4 tbs)|
Sift dry ingredients together, grind oats and add with coconut.
Cream shortening and sugar until frothy, add egg and beat well.
Mix milk and vanilla.
Add dry ingredients to creamed mixture alternately with milk and vanilla.
Mix thoroughly: Form into rolls, wrap in waxed paper and chill overnight in refrigerator.
Slice 1/8 inch thick, place on greased cookie sheet and bake at 400Â° F.
Makes 80 2 inch cookies.
