Refrigerator Oatmeal Cookies

Ingredients
  Cake flour 1 Cup (16 tbs)
  Soda 1⁄2 Teaspoon
  Salt 1⁄4 Teaspoon
  Rolled oats 2 Cup (32 tbs), finley ground
  Coconut 1 Cup (16 tbs), chopped
  Shortening 1⁄2 Cup (8 tbs)
  Sugar 1 Cup (16 tbs)
  Egg 1
  Evaporated milk 1⁄4 Cup (4 tbs)
  Vanilla 1 Teaspoon
Directions

Sift dry ingredients together, grind oats and add with coconut.
Cream shortening and sugar until frothy, add egg and beat well.
Mix milk and vanilla.
Add dry ingredients to creamed mixture alternately with milk and vanilla.
Mix thoroughly: Form into rolls, wrap in waxed paper and chill overnight in refrigerator.
Slice 1/8 inch thick, place on greased cookie sheet and bake at 400° F.
12 minutes.
Makes 80 2 inch cookies.
