Frying Pan Cookies
|Butter||1⁄2 Cup (8 tbs)|
|Sugar||1 Cup (16 tbs)|
|Egg||1 , beaten|
|Dates||1 Cup (16 tbs), chopped|
|Crisp rice cereal||2 Cup (32 tbs)|
|Chopped walnuts/Chopped pecans||1 Cup (16 tbs)|
|Shredded coconut||6 Ounce|
Melt the butter in a large skillet over low heat.
Add the sugar and blend well.
Remove from heat and cool for 5 minutes.
Stir in the egg, dates and salt.
Return to the stovetop and cook over low heat for 5 minutes remove from heat.
Stir in the crisp rice cereal and walnuts.
When cool enough to handle, shape into 2 inch balls with buttered hands and roll in coconut to coat.
Arrange on a tray to cool.
