|Lemon peel||1 Tablespoon, grated|
|Lemon juice||1 Tablespoon|
|Enriched flour||2 Cup (32 tbs), sifted|
|Baking powder||1 Teaspoon|
|Pecans||1 Cup (16 tbs), finley chopped|
Thoroughly cream shortening and sugar; add egg, lemon peel, and lemon juice; beat well.
Sift together dry ingredients; add to creamed mixture; mix well.
Stir in nuts.
Shape in rolls 2 inches across.
Slice very thin.
Bake on greased cooky sheet in moderate oven (350Â°) 12 to 15 minutes.
Cool slightly before removing from pan.
