Lemon-Pecan Dainties

Lemon pecan dainties are lemon flavored pecan nut cookies that require to be chilled before baking. Made with chopped pecans and flour along with sugar and shortening. An egg free cookie recipe, the lemon pecan dainties are sliced thin before baking.
  Shortening 2⁄3 Cup (10.67 tbs)
  Sugar 1 Cup (16 tbs)
  Lemon peel 1 Tablespoon, grated
  Lemon juice 1 Tablespoon
  Enriched flour 2 Cup (32 tbs), sifted
  Baking powder 1 Teaspoon
  Salt 1⁄2 Teaspoon
  Pecans 1 Cup (16 tbs), finley chopped

Thoroughly cream shortening and sugar; add egg, lemon peel, and lemon juice; beat well.
Sift together dry ingredients; add to creamed mixture; mix well.
Stir in nuts.
Shape in rolls 2 inches across.
Chill thoroughly.
Slice very thin.
Bake on greased cooky sheet in moderate oven (350°) 12 to 15 minutes.
Cool slightly before removing from pan.
