Almond Cookies

Ingredients
  Hydrogenated shortening 1 Cup (16 tbs)
  Sugar 1 Cup (16 tbs)
  Egg 1
  Almond extract 2 Teaspoon
  Sifted all purpose flour 3 Cup (48 tbs)
  Blanched whole almonds 3 Dozen
Directions

Preheat the oven to 350°F.
Cream together the shortening, sugar, egg, and almond extract.
Stir in the flour 1 cup at a time.
The dough will be very stiff.
Form dough into round balls the size of small wal nuts.
Place on a greased baking sheet and flatten to form thick rounds.
Press an al mond into the center of each cookie.
Bake for 10 minutes.
Remove, and cool on a wire rack.
Store in an airtight container.
