Raisin Oatmeal Cookies
|Raisins||1⁄4 Cup (4 tbs)|
|Flour||1⁄3 Cup (5.33 tbs)|
|Baking powder||1 Teaspoon|
|Oatmeal||1 3⁄4 Cup (28 tbs)|
|Lemon rind||1⁄2 Tablespoon|
|Shortening||1⁄4 Cup (4 tbs), melted|
|Sugar||1⁄4 Cup (4 tbs)|
|Molasses||1⁄3 Cup (5.33 tbs)|
Wash the raisins and drain.
Mix and sift the flour, baking powder, soda, and salt.
Combine the sugar, molasses, beaten egg, and milk with melted shortening, and mix well.
Add flour and oatmeal gradually.
Add raisins and grated lemon rind.
Drop from a teaspoon on greased baking sheets.
Bake in a moderate oven (375Â° F ) from 12 to 15 minutes.
