Spice Cookie Cutouts

Ingredients
  Raisin bran 1 1⁄2 Cup (24 tbs) (Post Brand)
  Sifted all purpose flour 1 3⁄4 Cup (28 tbs)
  Salt 1⁄4 Teaspoon
  Ginger 1⁄2 Teaspoon
  Cinnamon 1⁄2 Teaspoon
  Soft butter/Other shortening 1⁄2 Cup (8 tbs)
  Firmly packed brown sugar 1⁄2 Cup (8 tbs)
  Egg 1
  Soda 1⁄2 Teaspoon
  Molasses/1.5 cups grape nuts flakes / post 40% bran flakes / post toasties 1⁄3 Cup (5.33 tbs)
Directions

Crush cereal.
Sift flour once, measure, add salt, ginger, and cinnamon, and sift again.
Cream shortening and sugar together; add egg.
Mix thoroughly.
Stir soda into molasses and add to shortening mixture.
Add sifted dry ingredients and crushed cereal; mix well.
Chill until firm enough to roll.
Roll about 1/4 inch thick on lightly floured board or between waxed papers.
Cut with assorted cooky cutters.
Place on lightly greased baking sheet and bake in moderate oven (375° F.) for 15 minutes.
Makes 3 1/2 to 4 dozen cookies, about 2 1/2 inches in diameter.
Note: If desired, garnish cookies before baking with raisins, gumdrops, or nuts; or spread baked, cooled cookies with Brown Sugar Glaze (below).
