Date And Nut Cookies
|Crushed toasties||1⁄4 Cup (4 tbs) (Preferably Post)|
|Flour||1 1⁄4 Cup (20 tbs), sifted|
|Butter/Other shortening||1⁄2 Cup (8 tbs)|
|Sugar||3⁄4 Cup (12 tbs)|
|Chopped dates||1⁄2 Cup (8 tbs)|
|Chopped nuts/0.25 cup grape nuts flakes / post 40% bran flakes.||1⁄2 Cup (8 tbs)|
Crush cereal; then measure.
Sift flour once, measure, add soda and salt, and sift again.
Cream butter, add sugar gradually, and cream together until light and fluffy.
Add egg and beat well.
Add flour gradually, mixing after each addition.
Blend in vanilla.
Then fold in chopped dates and nuts.
Drop by tea-spoonfuls into the crushed cereal, rolling each cooky to coat on all sides.
Place about 2 inches apart on ungreased baking sheet.
Bake in a moderate oven (375Â°F.) from 8 to 10 minutes, or until done.
