Appetizer Cheese Cookie
|Sharp cheddar cheese||1⁄2 Pound, grated (Medium Ones)|
|Flour||1 1⁄2 Cup (24 tbs)|
|Tabasco sauce||4 Drop (Hot Variety)|
|Blue cheese||3 Teaspoon|
|Anchovy paste||1 Teaspoon|
Melt the butter and margarine.
Stir in the cheese.
Add the egg and mix well.
Blend in the flour, salt and hot sauce.
Knead a little to make a smooth dough.
Divide the dough into three portions.
Roll each out about 1/4-inch thick.
Spread one round with blue cheese, another with anchovy paste and leave the third one plain or use filling of your choice.
Roll each one like a sausage.
Flatten it down a little so it is 2x12-inches.
Wrap each portion separately in waxed paper.
Chill for 30 minutes or longer.
Slice each roll into about 12 pieces.
Bake at 375 degrees for about twenty to thirty minutes or until golden.
Note: You can prepare these a few weeks in advance.
Cool and place them in the freezer wrapped in plastic bags.
When ready to serve, reheat in oven and serve hot brown.
