Crunchy Cookies

  Unrefined safflower oil 1⁄2 Cup (8 tbs)
  Raw honey 1⁄4 Cup (4 tbs)
  Whole wheat flour 1 Cup (16 tbs)
  Chopped nuts 1⁄2 Cup (8 tbs)
  Grated citrus rind 1⁄2 Cup (8 tbs)
  Chopped dates 8 Ounce
  Grated coconut 4 Ounce

Preheat oven to 400°.
Mix the oil, honey, flour, nuts, and rind by hand.
Spread loosely on ungreased pan and bake for 15 minutes, lake pan out of the oven and stir the mixture.
Cook the chopped dates in a small amount of water until really soft (approximately 5 minutes).
Stir dates into baked mixture and add the grated coconut.
Shape into a long roll; wrap in waxed paper.
Refrigerate or freeze.
Slice and eat like cookies.
