Lemon-Pecan Thins

Ingredients
  Shortening 1⁄2 Cup (8 tbs)
  Lemon juice 2 Tablespoon
  Lemon rind 1 Tablespoon
  Sifted all purpose flour 2 Cup (32 tbs)
  Baking powder 1 Teaspoon
  Salt 1⁄4 Teaspoon
  Chopped pecans 1 Cup (16 tbs)
  Sugar 1 Tablespoon
  Egg 1
Directions

Combine shortening, 1 cup sugar and egg in mixing bowl and beat until well blended and fluffy.
Stir in lemon juice and lemon rind.
Sift flour, baking powder and salt together into mixture and stir to blend well.
Blend in nuts.
Shape into two short rolls with hands.
Wrap in waxed paper and chill several hours or wrap in aluminum foil and freeze until needed.
Heat oven to 375 degrees.
Slice rolls of dough thin and put on greased cookie sheets.
Sprinkle with sugar.
Bake 8 to 10 minutes or until delicately browned.
