Cocoa Peanut Butter Cookies with Jam

Three classic flavors of jam, peanut butter and cocoa make the cookies absolutely special.

Ingredients

Dry ingredients
All purpose flour 1 Cup (16 tbs) ((250 mL))
Unsweetened cocoa powder 1/3 Cup (5.33 tbs) ((75 mL))
Baking soda 1/2 Teaspoon ((2 mL))
Coarse salt 1 Pinch
Wet ingredients
Unsalted butter 1/2 Cup (8 tbs) ((125 mL, at room temperature))
Peanut butter 3/4 Cup (12 tbs) ((175 ml, at room temperature))
Sugar 3/4 Cup (12 tbs) ((175 ml))
Packed brown sugar 1/2 Cup (8 tbs)
Eggs 1 ((at room temperature))
Pure vanilla extract 1 Teaspoon
Jam 1/4 Cup (4 tbs) ((50 mL, of your choice))
For coating
Sugar 1/4 Cup (4 tbs) ((50 mL))

Directions

GETTING READY

1. Preheat oven to 375 degree F or 190 degree C.

2. Line a baking sheet with parchment paper and set aside.

MAKING

3. In a bowl, sift together the flour, cocoa powder, baking soda, and salt.

4. In a stand mixer, fitted with the paddle, beat the butter, peanut butter, ¾ cup of sugar, and brown sugar together, until smooth, scraping down the sides of the bowl if needed.

5. Add the egg and vanilla extract and mix until fully blended.

6. With the mixer running on low speed, gradually add the flour and cocoa mixture and beat until fully blended.

7. Form the dough into ¼ cup-size balls and roll in the sugar. Arrange 5 balls of dough, evenly apart, on each baking sheet.

8. Using the handle end of a wooden spoon, make a hole in the centre of each ball, about ½" to ¾" deep. Fill each hole with jam.

9. Bake for 11-14 minutes or until the dough has spread and the surface of the cookies are crackled. Cool slightly and then transfer to a wire rack to cool completely.
