Whip up a decadent, no bake cookie in just minutes! Most no-bake cookies are packed with sugar, but this recipe is low in sugar, and rich in healthy fats. It is a cookie you can feel good about eating yourself or about serving to your kiddos in their lunch box or as an after-school snack.
1 Centiliter (adds healthy dose of soluble fiber)
10 Medium (adds taste every kid will love)
Flaked unsweetened coconut
3 Tablespoon (unsweetened version contains less sugar)
2 Tablespoon (great source of plant-based omega-3 fats)
1⁄3 Cup (5.33 tbs) (use sunflower butter if concerned about nut allergy)
1 Tablespoon (92% sat fat, but this fatty acid profile might actually have some health benefits)
1⁄4 Cup (4 tbs) (of your choice, how about raisins, craisins, currants, chopped apricots)
1 Tablespoon (here is our touch of sugar)
1. Combine oats, flaxseed, graham crackers and coconut flakes in blender or food processor until dry mix is a fine crumb.
2. Pour dry mixture into a mixing bowl and add in rest of ingredients.
3. Mix well and shape into cookies. Cool to set.
4. Include in your kids lunch box or serve as an after-school snack with milk or hot chocolate. You can also enjoy these as a healthy after meal sweet treat.
Add a bit more nut butter or coconut oil if the mixture is too dry.
