Tempting Peanut Brittle

Ingredients
  Sugar 2 Cup (32 tbs)
  Light corn syrup 1 Cup (16 tbs)
  Salted peanuts 1 1⁄2 Cup (24 tbs)
  Butter 3 Tablespoon
  Vanilla 1 Teaspoon
  Soda 2 Teaspoon
Directions

Combine sugar, corn syrup and 1/4 cup water in 3-quart heavy saucepan; mix well.
Cook over medium heat, stirring constantly, until sugar dissolves.
Cook, stirring frequently, until candy thermometer registers 285 degrees.
Remove from heat; stir in pea- nuts and butter.
Cook, stirring constantly, to 295 degrees.
Remove from heat.
Add vanilla and soda; stir quickly to blend.
Mixture will foam.
Pour onto greased marble slab or 2 large greased baking sheets; spread out thin.
Cool for 5 minutes or just enough to handle.
Turn candy over; pull to stretch as thin as possible.
Cool thoroughly; break into pieces.
Yield: About 2 pounds.
