Basic Cookie Mix
|Unbleached flour||9 Cup (144 tbs)|
|Baking soda||4 Teaspoon|
|Shortening||4 Cup (64 tbs)|
|Granulated sugar||3 Cup (48 tbs)|
|Brown sugar||3 Cup (48 tbs), firmly packed|
1) Use a large bowl, to add all the dry ingredients. Combine these thoroughly.
2) Use a pastry blender, 2 forks or fingertips to cut in shortening to the mixture until it becomes crumbly.
3) Use to prepare cookies or store in airtight container in cool, humid-free place for 3 or 4 months.
