Cookie Tart Shells
|Margarine||1⁄2 Cup (8 tbs)|
|Sugar||1⁄2 Cup (8 tbs)|
|Orange juice||1 Tablespoon|
|Sifted flour||1 1⁄2 Cup (24 tbs)|
|Baking powder||1 Teaspoon|
Cream margarine; add sugar gradually and mix well.
Add egg and orange juice; mix well.
Sift flour, baking powder and salt together.
Add to creamed mixture and blend well.
Roll dough on a lightly floured board to 1/8 -inch thick- ness; cut into rounds.
Invert muffin tins and grease outside of cups.
Place rounds over cups, press down and pinch edges of dough at intervals to fit cups.
Prick with a fork.
Bake in a mod- erate oven (375° F) 6 to 8 minutes.
Cool 1 minute before remov- ing shells.
Fill with berries, pudding or ice cream for serving.
Makes 10 or 12 tart shells.
