Monster Cookies

A while back, I posted on the Facebook Recipe Club asking what everyone’s favorite cookie was. Monster cookie came up a few times, and to be honest, I had no idea what it was! But when I was told, I realized that I too, would be a Monster Cookie fan, just based on the ingredients alone! So then it was my task to come up with a healthier version. Here it is!
Ingredients
  Margarine/Butter 1⁄4 Tablespoon (Like Earths Balance)
  Brown sugar 1⁄4 Cup (4 tbs)
  Stevia 1⁄3 Cup (5.33 tbs)
  Liquid egg whites 1⁄3 Cup (5.33 tbs) (Carton Kind)
  Natural peanut butter 1⁄3 Cup (5.33 tbs) (Smooth)
  Unsweetened applesauce 1⁄3 Cup (5.33 tbs) (1 Snack Pack)
  Vanilla 1 Teaspoon
  Old fashioned oats 2 Cup (32 tbs)
  Oat flour 1 Cup (16 tbs)
  Baking soda 1 Teaspoon
  Salt 1 Pinch
  Raisins 1⁄4 Cup (4 tbs), chopped
  Milk chocolate candies 1⁄4 Cup (4 tbs)
  Semisweet chocolate chips 3 Tablespoon
Directions

Preheat oven to 350 degrees F. In a stand mixer or large bowl, cream together margarine, brown sugar, stevia and egg whites. Add in applesauce, peanut butter, vanilla and mix until blended smooth. Then add in oats, oat flour, baking soda and salt, stir until blended. Next is all the goodies, add chopped raisins, M&M’s, chocolate chips and stir until just mixed (if you over-stir the candy coating will start to melt off). Using a cookie spoon, drop by spoonful onto a parchment paper covered cookie sheet. Bake at 350 degrees F for 14-15 minutes. Once cool, place from cookie sheet to rack.
