Pumpkin Cookies

Delicious pumpkin cookies that are soft and have a cake-like texture! Great for Halloween parties! Happy Halloween!
Ingredients
  Butter 1 Cup (16 tbs) (At room temperature)
  Sugar 1⁄2 Cup (8 tbs)
  Brown sugar 1⁄2 Cup (8 tbs), firmly packed
  Canned pumpkin 1 Cup (16 tbs)
  Eggs 1
  Vanilla extract 1 Teaspoon
  Flour 2 Cup (32 tbs)
  Baking soda 1 Teaspoon
  Baking powder 1 Teaspoon
  Salt 1⁄4 Teaspoon
  Cream cheese frosting 1 Cup (16 tbs)
  Sprinkles 1⁄2 Cup (8 tbs) (Optional)
Directions

GETTING READY:
1)Preheat oven to 350 degrees.

MAKING:
2)In a large bowl, cream together butter, sugar and brown sugar. Then add the pumpkin, egg and vanilla extract.
Mix until well combined.
3)In another bowl, add flour, baking soda, baking powder, cinnamon and salt.
Stir well.
4)Add flour mixture to the butter-sugar mixture and mix well. Drop mixture by tablespoon onto ungreased cookie sheets. Cookies should be about 3 inches apart.
5)Bake in oven for 10 - 12 minutes or until edges are golden. Remove from oven and place on racks to cool.

SERVING:
6)Once cookies are completely cool, top with cream cheese frosting and decorate with sprinkles.
