This Top Hatters is a great treat for the mid-day break, be it morning or in the evening! And also, surprisingly easy to make, I have this Top Hatters right there on my table for almost all the parties on short notice. So here's the recipe and simply indulge in!
Ingredients
  Cornbread squares 12
  Tomato slices 12
  Egg whites 3
  Egg yolks 3
Grated sharp cheese 1 Cup (16 tbs)
Crumbled cooked bacon 1⁄4 Cup (4 tbs)
Directions

Cut 6 square pieces of cornbread in half crosswise to make 12 thin squares.
Brush with melted butter or margarine and place in the broiler for three minutes or until the cornbread is delicately browned.
Top each square with a tomato slice and set aside for a moment.
Beat egg whites until stiff but not dry.
Beat egg yolks until thick and lemon colored.
Fold egg yolks into egg whites, then fold in cheese and bacon into egg mixture.
Place a spoonful of this souffle mixture on each tomato slice.
Return to the broiler for a few minutes or until the souffle topping is puffed and brown.
This hors d'oeuvre should be served immediately since it won't wait
