Cheese Top Hats
|Grated sharp cheese||1 Cup (16 tbs)|
|Crumbled cooked bacon||1⁄4 Cup (4 tbs)|
Cut 6 square pieces of cornbread in half crosswise to make 12 thin squares.
Brush with melted butter or margarine and place in the broiler for three minutes or until the cornbread is delicately browned.
Top each square with a tomato slice and set aside for a moment.
Beat egg whites until stiff but not dry.
Beat egg yolks until thick and lemon colored.
Fold egg yolks into egg whites, then fold in cheese and bacon into egg mixture.
Place a spoonful of this souffle mixture on each tomato slice.
Return to the broiler for a few minutes or until the souffle topping is puffed and brown.
