|Sugar||1⁄2 Cup (8 tbs)|
|Chocolate pieces||1 Cup (16 tbs)|
|Cream of tartar||1⁄8 Teaspoon|
|Peppermint extract||1⁄4 Teaspoon|
Beat egg whites until foamy.
Add salt and cream of tartar; beat until stiff peaks form.
Add sugar, two tablespoons at a time; beat until glossy.
Fold in chocolate pieces and peppermint extract.
Drop dough by rounded teaspoonfuls onto baking sheets covered with heavy ungreased paper.
Bake at 300 degrees for 25 minutes.
Cool before removing from paper.
Yield: 2 1/2 dozen cookies.
