1)In a bowl, beat together shortening and sugar until light and fluffy.
2)Add eggs and beat until smooth.
3)Add mincemeat and stir.
4)In another bowl, sift together flour, salt and soda.
5)Mix it with shortening mixture and mix thoroughly.
6)Take a greased baking sheet and drop spoonsful of batter on it, about 2 inches apart.
7)Bake at 375 degrees for about 12 minutes, or until golden brown.
8)Serve the mincemeat cookies for a quick snack in between meals.
