Lemon Meringue Bars

Ingredients
  Eggs 2 , separated
  Butter 1⁄2 Cup (8 tbs)
  Sifted confectioners' sugar 1⁄2 Cup (8 tbs)
  Sifted all purpose flour 1 Cup (16 tbs)
  Salt 1⁄4 Teaspoon
  Grated lemon rind 1 Tablespoon
  Granulated sugar 1⁄2 Cup (8 tbs)
  Lemon juice 1 Tablespoon
Directions

Combine egg yolks and next 5 ingredients in bowl and knead with hands until mixture is smooth and color evenly distributed.
Spread in ungreased 9-inch square pan and bake in preheated moderate oven (350°F.) 10 minutes.
Remove from oven and cool while making meringue.
Beat egg whites until they hold soft peaks.
Gradually sprinkle on granulated sugar and beat until firm; beat in lemon juice.
Spread over cookie dough and return to oven 20 to 25 minutes, or until well browned.
Cool and cut in bars.
Makes about 2 dozen.
