Jelly Meringue Bars
|Shortening||1⁄2 Cup (8 tbs)|
|Confectioner' s sugar||1⁄2 Cup (8 tbs), sifted|
|Flour||1 Cup (16 tbs), sifted|
|Jelly||3⁄4 Cup (12 tbs)|
|Sugar||1⁄2 Cup (8 tbs)|
|Nuts||1 Cup (16 tbs), ground|
Cream together shortening and sugar until light and fluffy.
Beat in eggs.
Add flour and blend well.
Press with hand into bottom of ungreased, 13 by 9-inch oblong pan.
Bake in a moderate oven (350° F) 10 minutes.
Remove from oven.
Cool slightly and spread with jelly.
Beat egg whites until stiff.
Gradually add sugar and cinnamon and beat until glossy.
Fold in nuts.
Pile on top of jelly.
Return to 350° F oven and continue baking 25 minutps or until topping is golden brown.
Cool slightly and cut into bars.
