Trail Mix Protein Granola Bars

BusyButHealthy's picture
Busy But Healthy show host Kristine Fretwell offers and quick and healthy snack, Trail Mix Protein Bars.
Ingredients
Old fashioned rolled oats 1 Cup (16 tbs)
Whey protein 90 Gram (3 Scoops Of 30 Gram, Vanilla / Plain)
Trail mix 80 Gram, chopped (1/2 Cup)
Natural peanut butter 1⁄2 Cup (8 tbs)
  Agave syrup/Honey / maple syrup 1⁄4 Cup (4 tbs)
  Water 1⁄4 Cup (4 tbs)
Directions

Preheat oven to 325 degrees F. Line cookie sheet with parchment paper. If needed, slightly melt peanut butter to make a runnier consistency, but not hot (in microwave for 20 seconds). Place all ingredients in a large bowl and mix together with hands until blended. Press onto cookie sheet lined with parchment in the shape of a large rectangle, covering the surface of the pan. It will be sticky, so a rubber spatula & hands work the best. You’ll want it to be a thinner layer.

Bake for 10 minutes, then remove from oven, cut into 12 bars, separate them a bit so they aren’t touching, then return to oven and bake for another 12-14 minutes until they are golden brown. Allow to cool on a rack. They will get crunchy as they cool. Store in an airtight container at room temperature. Can also be frozen to prolong shelf life.
