Mint Chocolate Chip Cookies: Cookie Jar

These cookies are chewy, chocolaty, and minty. Very refreshing!
Ingredients
  Butter 3⁄4 Cup (12 tbs)
  Brown sugar 1⁄2 Cup (8 tbs)
  Sugar 1⁄2 Cup (8 tbs)
  Egg 1
  Vanilla 1 Teaspoon
  Peppermint extract 1 Teaspoon
  Flour 1 1⁄2 Cup (24 tbs)
  Unsweetened cocoa 1⁄4 Cup (4 tbs)
  Baking soda 1 Teaspoon
  Salt 1⁄4 Teaspoon
  Semi-sweet chocolate chips 1 Cup (16 tbs) (milk or 60% chocolate)
Directions

MAKING:
1. Preheat oven to 350 degrees. Line baking sheet with parchment paper.
2. In a mixer or a bowl with a spatula cream together the butter and sugars.
3. To the mixer beat in the egg and add vanilla and the peppermint extract.
4. Combine the flour, unsweetened cocoa, baking soda and salt into bowl and add to the butter mixture.
5. Stir in the chocolate chips.
6. Drop onto baking sheet and bake in the oven for 11 minutes.

SERVING:
7. Serve after the cookies are completely cooled down and pair them with your choice of beverages and enjoy!
