|Caster sugar||8 Ounce (225 Gram)|
|Ground almonds||5 Ounce (150 Gram)|
|Rice flour||1 Tablespoon|
Mix the sugar, almonds and rice flour together and set aside.
Beat the egg whites lightly, add the dry ingredients, and beat to a smooth, firm consistency.
Leave to stand for 5 minutes, then roll into small balls and place slightly apart on a baking tray lined with rice paper.
Flatten slightly and place a split almond on each one.
Bake in a preheated oven for 20 minutes.
Cool on the baking tray.
