Viennese Almond Cookies

Ingredients
  Egg whites 3
  Sugar 1 Cup (16 tbs)
  Vanilla extract 1⁄2 Teaspoon
  Salt 1 Pinch
  Ground almonds 1 1⁄4 Cup (20 tbs)
  Semisweet chocolate squares 6 (1 Ounce)
  Unsalted butter 1 Tablespoon
Directions

MAKING
1. In a bowl, beat egg whites till stiff; add sugar, vanilla extract, salt and ground almonds to it and blend them all well
2. Line a baking sheet with parchment or rice paper and arrange spoonfuls of this mixture into it, with some space in between
3.Bake for ten minutes at 325° F, till cookies turn firm; allow to cool and remove from the parchment paper
4. In a double boiler, melt butter and chocolate
5. Dip the base of each cookie in the chocolate and leave to dry upside down

SERVING
6. Serve as appropriate
