Macaroon Tortoimi

Ingredients
  Eggs 2 , separated
  Powdered sugar 1⁄2 Cup (8 tbs)
  Sherry 2 Tablespoon
  Vanilla 1⁄2 Teaspoon
  Heavy cream 1 Cup (16 tbs), whipped
  Macaroon crumbs 3⁄4 Cup (12 tbs)
Directions

MAKING
1) In a bowl, using an electric mixer, beat the egg whites till stiff
2) Using the electric mixer, beat the egg yolks in another bowl till fluffy
3) Add in the sherry and the vanilla
4) Fold in the egg whites into the egg yolk mixture and then the whipped cream slowly
5) Add in the ½ cup of the macaroon crumbs
6) Into paper dessert cups, spoon in the mixture
7) Lightly sprinkle atop each cup with some macaroon mixture
8) Place in the refrigerator to chill and firm

SERVING
9) Serve chilled
