Ingredients
  Butter 4 Ounce, softened (100 Gram)
  Demerara sugar 3 Ounce (75 Gram)
  Egg yolk 1 Medium
  Plain flour 175 Gram, sifted (6 Ounce)
  Ground cinnamon 1⁄2 Teaspoon
  Ground mixed spice 1⁄2 Teaspoon
  Raisins 3 Ounce, chopped (75 Gram)
  Chopped walnuts 1 Ounce (25 Gram)
  Glace cherries 9 , halved
Directions

GETTING READY
1) Preheat the oven to 325 Deg F (170 DegC/Gas 3), grease and line a 11 x 7 inch shallow tin.

MAKING
2) Cream together the butter and sugar until fluffy, beat in the egg yolk, stir in the flour, spices, raisins and nuts with a wooden spoon, blend well until crumbly.
3) Pour into the greased tin, pressing down with a palette knife to smooth the surface and mark into 18 squares; press a halved cherry into the center of each square.
4) Bake in the preheated oven for 30 min until golden; remove and cut through the squares while it is still hot.; cool in the tin then turn out.

SERVING
5) Serve on a nice dish.
