|Caster sugar||175 Gram|
|Egg||1 , beaten|
|Desiccated coconut||3 Ounce (75 Gram)|
|Self-raising flour||6 Ounce, sifted (175 Gram)|
Cream the butter until soft, then add the sugar and beat until light and fluffy.
Add the egg and beat thoroughly.
Add half the coconut and the flour and stir until mixed.
Form into small balls and roll in the remaining coconut.
Place the balls slightly apart on a greased baking tray and flatten each one with a palette knife.
Bake in a preheated oven for 10-15 minutes.
Transfer to a wire rack to cool.
