|Sugar||1⁄2 Cup (8 tbs)|
|Lemon juice||1 Teaspoon|
|Shredded coconut||6 Cup (96 tbs), dry|
|Walnuts||1 Cup (16 tbs), chopped|
|Pitted dates||2 Cup (32 tbs), cut into pieces|
Beat egg whites stiff, beat in salt and sugar gradually, then add lemon juice, coconut, walnuts and dates.
Moisten hands and mold mixture into small balls.
Place on greased cookie sheet and bake in moderate oven (350° F.) 10 minutes or until browned.
Makes about 20 haystacks.
