Harvest Moons Cookies
|Whole wheat pastry flour||1⁄2 Cup (8 tbs)|
|Unbleached flour||1⁄2 Cup (8 tbs)|
|Rolled oats||1⁄2 Cup (8 tbs) (Regular Or Quick)|
|Baking soda||1⁄2 Teaspoon|
|Brown sugar||1⁄3 Cup (5.33 tbs)|
|Granulated sugar||1⁄3 Cup (5.33 tbs)|
|Unsalted margarine||1⁄3 Cup (5.33 tbs)|
|Cooked pumpkin/Squash butternut / hubbard||1⁄2 Cup (8 tbs)|
Combine flours, oats, baking soda and cinnamon.
Cream sugars, margarine and vanilla.
Add egg white and cream.
Stir in pumpkin or squash.
Mix in dry ingredients.
Drop by teaspoons onto lightly greased cookie sheet.
Flatten cookies with wet fingers to 1/8".
Bake at 350° for 10 minutes.
Cool and ice.
