Ingredients
  Whole wheat pastry flour 1⁄2 Cup (8 tbs)
  Unbleached flour 1⁄2 Cup (8 tbs)
  Rolled oats 1⁄2 Cup (8 tbs) (Regular Or Quick)
  Baking soda 1⁄2 Teaspoon
  Cinnamon 1⁄2 Teaspoon
  Brown sugar 1⁄3 Cup (5.33 tbs)
  Granulated sugar 1⁄3 Cup (5.33 tbs)
  Unsalted margarine 1⁄3 Cup (5.33 tbs)
  Vanilla 1⁄2 Teaspoon
  Egg white 1
  Cooked pumpkin/Squash butternut / hubbard 1⁄2 Cup (8 tbs)
Directions

Combine flours, oats, baking soda and cinnamon.
Set aside.
Cream sugars, margarine and vanilla.
Add egg white and cream.
Stir in pumpkin or squash.
Mix in dry ingredients.
Drop by teaspoons onto lightly greased cookie sheet.
Flatten cookies with wet fingers to 1/8".
Bake at 350° for 10 minutes.
Cool and ice.
