Golden Cheddar Rings
|Butter||3⁄4 Cup (12 tbs), softened to room temperature (No Substitute)|
|Sifted flour||2 Cup (32 tbs)|
|Cayenne pepper||1⁄4 Teaspoon|
|Sharp cheddar cheese||1 Pound, coarsely grated|
|Superfine sugar||2 Tablespoon|
Preheat oven to 400° F.
Rub butter, flour, paprika, salt, and cayenne together, using your hands, until smooth and creamy.
Add cheese and knead on a piece of foil 3-4 minutes until smooth and thoroughly blended.
Roll dough thin, half at a time, on a lightly floured pastry cloth (it should be about as thin as piecrust).
Cut into rings with doughnut cutter and bake on ungreased baking sheets 4—6 minutes until faintly browned.
Remove at once to wire racks to cool and, while still hot, sprinkle lightly with sugar.
Scraps and "holes" can be rerolled and cut.
