Basic Refrigerator Cookies
|Sifted flour||2 Cup (32 tbs)|
|Baking soda||1⁄2 Teaspoon|
|Butter/Margarine||1⁄2 Cup (8 tbs)|
|Granulated sugar/Light or dark brown sugar||1 Cup (16 tbs)|
Sift flour with salt and baking soda and set aside.
With rotary beater or electric mixer cream butter, sugar, egg, and vanilla until light and fluffy.
Slowly mix in dry ingredients; shape dough into a roll about 2" in diameter; wrap in foil or plastic food wrap and chill several hours or overnight.
Preheat oven to 400° F.
Slice roll 1/8" thick and arrange slices 1/2" apart on ungreased baking sheets.
Bake 8-10 minutes until pale tan.
Cool cookies on wire racks.
