Ingredients
For filling
  Pumpkin 1 Cup (16 tbs)
  Sugar 1⁄2 Cup (8 tbs)
  Cinnamon 1⁄2 Teaspoon
  Ginger 1⁄2 Teaspoon
  Nutmeg 1⁄4 Teaspoon
  Salt 1⁄4 Teaspoon
For cookies
  Flour 3 Cup (48 tbs)
  Salt 1 Teaspoon
  Baking soda 1⁄2 Teaspoon
  Brown sugar 1⁄2 Cup (8 tbs)
  Soft shortening 3⁄4 Cup (12 tbs)
  Egg 1
  Molasses 1⁄4 Cup (4 tbs)
  Rolled oats 1 Cup (16 tbs)
Directions

Mix and sift together flour, salt, and baking soda.
Combine sugar, shortening, egg, and molasses; mix well.
Add oats.
Chill 1/2 hour.
Roll out 1/8 inch thick; place 1 tablespoon filling on 1 cookie and cover with second cookie.
Press together, slit top.
Bake 375 degrees for 15 minutes.
