Mint Cream Cheese Cookies
|Butter/Margarine||1⁄2 Cup (8 tbs)|
|Cream cheese||3 Ounce (1 Package)|
|Sugar||1⁄2 Cup (8 tbs)|
|Peppermint extract||2 Drop (Adjust Quantity As Needed)|
|All purpose flour||1 Cup (16 tbs)|
|Baking powder||2 Teaspoon|
|Flaked coconut||1 Cup (16 tbs)|
|Maraschino cherries||1 Tablespoon, halved (Red / Green Colored)|
Cream together butter or margarine, cream cheese, sugar, and peppermint extract till light.
Stir together flour, baking powder, and salt thoroughly; stir into creamed mixture just till combined.
Chill 2 hours.
Shape into 1-inch balls; roll each in coconut.
Place on ungreased cookie sheet.
Top each with half a cherry.
Bake at 350° for 12 to 15 minutes.
Cool on racks.
