Cinnamon Bowtie Cookies
|Flour||1 Cup (16 tbs) (1/4 to 1 cup)|
|Sugar||1⁄2 Cup (8 tbs)|
|Baking powder||1⁄4 Teaspoon|
|Lemon zest||1⁄2 Teaspoon|
|Orange zest||1⁄2 Teaspoon|
|Vegetable oil||2 Tablespoon|
|Fresh lemon juice||1 1⁄2 Teaspoon|
|Orange juice||1 Tablespoon|
1. Preheat oven to 350°F. In a medium bowl, mix 1/4 cup flour and 1/4 cup sugar with baking powder, lemon zest, orange zest, and salt. Beat with a wooden spoon until blended. Mix in oil, egg, lemon juice, and orange juice just until dough forms. Stir in enough remaining flour so dough is not sticky.
2. Stir together remaining 1 tablespoon sugar and cinnamon. On wellfloured board, roll dough to a 12 x 8-inch rectangle. Sprinkle with cinnamon sugar. Cut in half lengthwise, then into 1-inch strips, making 24 rectangles about 4x1 inch. Twist in center to make bow tie. Place on a greased cookie sheet.
3. Bake 10 minutes, or until golden. Remove to a rack and let cool completely.
