|Granulated sugar||2 Cup (32 tbs)|
|Light corn syrup||1 Cup (16 tbs)|
|Water||1⁄2 Cup (8 tbs)|
|Butter/Margarine||1⁄4 Cup (4 tbs)|
|Salted peanuts||2 Cup (32 tbs)|
|Baking soda||2 Teaspoon|
Grease large baking sheet with sides and set aside.
Put sugar, syrup and water into large heavy saucepan.
Bring to boil, stirring to dissolve sugar.
Boil, stirring often, to soft ball stage, 235°F (112°C).
In ice water it forms a ball which flattens easily.
Add peanuts and butter, stirring to mix.
Continue boiling to hard crack stage, 300°F (150°C) or until a small amount dropped into ice water separates into threads which are hard and brittle.
Stir frequently to prevent scorching.
Very quickly stir in vanilla and baking soda.
Mixture will foam.
Pour while still foaming onto greased baking sheet.
To serve, break into small pieces.
