Holiday Lemon Drops
|Butter stick||1 1⁄2 , softened|
|Cream cheese||1 , softened|
|Granulated sugar||3⁄4 Cup (12 tbs)|
|Vanilla extract||1⁄2 Teaspoon|
|Lemon extract||1⁄2 Teaspoon|
|Lemon zest||2 Teaspoon, grated|
|Cake flour||2 Cup (32 tbs)|
|Walnuts||1⁄2 Cup (8 tbs), finely chopped|
|Powdered sugar||1⁄2 Cup (8 tbs)|
1. Preheat oven to 300°F. In a medium bowl, beat butter, cream cheese, and granulated sugar with an electric mixer on medium speed until light and fluffy. Beat in vanilla, lemon extract, and lemon zest.
2. Add cake flour and salt and beat on low speed until blended. Stir in walnuts. Drop by teaspoonfuls 2 inches apart onto ungreased cookie sheets.
3. Bake 20 to 25 minutes, until set but not browned. Let cookies cool on sheets 2 minutes. Roll in powdered sugar, transfer to a rack, and let cool completely.
