Christmas Butter Cookies

Ingredients
  Flour 12 Ounce (375 Grams)
  Baking powder 2 Teaspoon
  Salt 1 Pinch
  Butter 8 Ounce, cut into pieces (250 Grams)
  Eggs 2
  Caster sugar 7 Ounce (220 Grams)
  Vanilla essence 1 1⁄2 Teaspoon
  Finely grated lemon rind 1 Teaspoon
  Egg white 1 , lightly beaten (To Brush)
  Sugar/Colored sugar 1 Tablespoon (To Decorate)
  Assorted cookie decorations 1⁄2 Cup (8 tbs)
Directions

1. Sift together flour, baking powder and salt. Rub in butter with fingertips until mixture resembles breadcrumbs. Make a well in center of mixture.
2. Beat together eggs, sugar, vanilla essence and lemon rind, add to flour mixture and mix to make a soft dough. Knead lightly on a floured surface and cut into 4 pieces. Wrap each in plastic food wrap and chill for 3 hours.
3. Preheat oven to 180°C/350°F/Gas 4. Roll out one piece of dough at a time to 5 mm / 1/4 in thick and cut into desired shapes. Brush shapes with egg white. Decorate cookies as desired.
4. Arrange cookies on lightly greased and floured baking trays and bake for 10-12 minutes or until cookies are firm and edges are golden. Cool on wire racks.
